Choosing the Right All American Pressure Canner For Your Kitchen


 

The All American pressure canner has been manufactured by the Wisconsin Aluminum Foundry since 1930. Today, the Wisconsin Aluminum Foundry makes their canners in six sizes, ranging from the small 10 quart model to the enormous 41 quart pressure canner. In addition, the foundry has a separate line of cast aluminum pressure cookers sold under the Chef's Design label. Most pressure canner manufacturers make both pressure canners and pressure cookers under the same label. While the Wisconsin Aluminum Foundry makes both, the All American line is focused upon making the best canner possible.

The Model 910 pressure canner is the smallest All American model. It holds 10 1/2 quarts of liquid, and has the capacity to hold seven pint or four quart sized Mason jars. The Model 915 holds 15 1/2 quarts of liquid, ten pint jars, or seven quart jars. The Model 921 is All American's most popular pressure canner. It holds 21 1/2 quarts of liquid, 19 pint jars, or seven quart jars. The Model 925 holds the same number of jars as the 921, but can hold up to 25 quarts of liquid. The 930 can hold 30 quarts of liquid and up to 14 quart jars. The largest All American pressure canner, the Model 941, holds 41 1/2 quarts of liquid, 32 pint jars, or 19 quart jars.

Perhaps the most notable feature of All American pressure canners is their sealing system. Most pressure canners use a rubber gasket. The precision machined seals on these canners, however, clamp metal to metal in a screw-down seal that is steam-tight.

All of the pressure canners manufactured in the All American line are constructed of professional quality cast aluminum. This is extra heavy duty aluminum that is cast double-thick for strength at points where the pressure canner is likely to suffer the heaviest wear.

All American pressure canners have a variety of convenient features. Unlike many other pressure canners, they have an easily grasped top handle that is made of Bakelite and is designed to stay cool while the canner is in use. These canners come with both a pressure regulator weight that has three settings (five, ten, and fifteen pounds per square inch) and a steam gauge that will provide a clear and accurate reading of the current pressure within the canner. Cleaning the canner is made easy by its smooth, satin finish.

Safety features on these canners include an overpressure plug and a safety control valve, both of which can provide automatic venting. When coupled with the heavy-duty design of these pressure canners, you should have few safety concerns in using them.

Every All American pressure canner comes with a cooking and canning rack and an instruction booklet. In addition to use and care instructions, this booklet provides useful information on pressure cooking and pressure canning. It has instructions and recipes for pressure cooking meats, vegetables, fruit, soup, and deserts. Most of the instruction book, however, is devoted to canning. It includes timetables, recipes, and canning instructions for a wide variety of food.
